Description |
The product is produced through submerged fermentation of Bacillus licheniformis, followed by purification, drying, and formulation. It effectively hydrolyzes proteins in an alkaline pH range, generating peptides. Alcalase has been successfully used for hydrolyzing soybean protein and other vegetable proteins, as well as collagen and aquatic products. As a serine-type endopeptidase, Alcalase efficiently breaks down proteins into peptides or amino acids, making it highly effective for various hydrolysis applications. |
