Overview

Summary An enzyme blend containing mainly pectinases but also other activities like cellulases, amylase and proteases that can cooperatively degrade their respective substrates, preventing browning, speeding up filtration, lowering down the sugar content.
Description The product is produced through submerged fermentation of a carefully selected microbial strain, followed by separation, formulation, and drying. It primarily contains xylanases, complemented by additional beneficial activities such as cellulase. The strong synergistic effects between these enzymes lead to the efficient degradation of pentosans and cellulosic substances during plant extraction. This process breaks down these complex compounds into oligomers and simple sugars, facilitating extraction by reducing viscosity and enhancing the release of functional components.

Application Recommendation The recommended dosage 0.3-0.5% on basis of dry raw material. The dosage has to be optimized based on raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.
Before dosing disperse the enzyme warm water and add into plant raw materials, stir gently to mix, adjust pH and temperature when necessary, keep at 40°C for 2hrs, go on with the rest processes as usual.
