Overview

Summary Xylanase degrades xylan and reduces the viscosity of starch slurry or culture medium containing xylan. It's applied to ease alcohol fermentation and increase ethanol yield when raw materials rich in xylan are used, such as wheat-based raw materials.
Description Xylanase is produced through submerged fermentation of Trichoderma reesei, followed by purification and formulation. This enzyme targets hemicellulose substances, effectively reducing the viscosity of starch slurries. It is commonly used in the alcohol and brewing industries, particularly when working with wheat raw materials.
The enzyme primarily consists of endo β-1,4 xylanase and β-xylosidase. Endo β-1,4 xylanase breaks down xylan into oligoxylose and xylobiose, while β-xylosidase further converts these products into xylose. This dual action significantly lowers the viscosity associated with xylan, facilitating smoother processing.
