Overview

Description Trehalose Synthetase is produced by submerged fermentation followed by separation, ultrafiltration and formulation. It's the key enzyme for the synthesis of trehalose using a single enzyme method. This enzyme is a maltose α-D-glucose transferase.
Mechanism During the synthesis of alginate, Trehalose Synthetase catalyzes maltose to convert α-1,4-glycosidic linkages to α-1,1-glycosidic linkages, generating trehalose.
Advantages Enzymatic synthesis of trehalose in a single enzyme system
Application Enzymatic synthesis of trehalose in a single enzyme system
Application Area Food
Biosynthesis
Application Recommendation The recommended dosage is 0.1-1 kg/T of raw material. The dosage has to be optimized based on real situation, the raw material specifications, product expectations and processing parameters. It is better to begin the test with the smallest quantity.
