Overview

Summary The thermal stable debranching enzyme able to work at low pH. It's able to convert branched starch into fermentable sugars, therefore increase wort fermentability and utilization of raw materials and brewing yield.
Description This product is produced by submerged fermentation of Bacillus subtilis followed by purification and formulation. It is a thermal-stable debranching enzyme capable of working at low pH. The enzyme effectively removes starch side chains, reduces the amount of limit dextrin, and converts branched starch into fermentable sugars. This results in increased utilization of raw materials and improved brewing yield.
Pullulanase is a type of isoamylase that selectively hydrolyzes α-1,6-glucosidic linkages in pullulan, starch, and oligosaccharides. By doing so, it enables the complete hydrolysis of branched starch. When used in conjunction with other enzymes such as glucoamylase and β-amylase, it accelerates saccharification and increases the yield of glucose or maltose.
Advantages Brewing pullulanase is able to increase wort fermentability
Inrease beer yield
and raw material utilization
Application For the use in mashing to increase wort fermentable sugars
Application Area Brewing
Application Recommendation The recommended dosage is 0.4-0.8 L of the enzyme preparation per ton of total raw materials. The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.
