Overview

Summary It is a thermal stable starch debranching enzyme able to work at low pH, and is widely used in starch sugar processing, brewing, monosodium glutamate and alcohol fermentation, and other cases where maximal starch conversion into glucose are beneficial.
Description This product is derived from the submerged fermentation of Bacillus subtilis, followed by purification and formulation. It is a thermally stable debranching enzyme effective at low pH, and finds extensive application in brewing, starch sugar processing, monosodium glutamate production, alcohol fermentation, and more.
Pullulanase, a type of isoamylase, specifically hydrolyzes α-1,6-glucosidic linkages in pullulan, starch, and oligosaccharides. This allows for the complete hydrolysis of branched starches. When used in conjunction with other enzymes such as glucoamylase and β-amylase, pullulanase enhances saccharification processes and increases the yield of glucose or maltose.

Application Recommendation Glucose production: The recommended dosage is 0.35-0.6 L per ton of dry starch together with glucoamylase together in saccharification step.
Maltose syrup: The recommended dosage is 1-2 L per ton of dry starch together with Fungal Alpha-Amylase can together use in saccharification step.
In brewhouse: The recommended dosage is 0.4-0.8 L of the enzyme preparation per ton of total raw materials. It's used for degradation of amylopectin and production of dry beer.
Pullulanase can also be used to improve the glucose yield and shorten saccharification time in pre-treatment of fermentation media like in the case of monosodium glutamate, alcohol, vinegar and soy sauce and so on.
The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.
