Overview

Summary An enzyme blend containing mainly pectinases but also other activities like cellulases, amylase and proteases that can cooperatively degrade their respective substrates, preventing browning, speeding up filtration, lowering down the sugar content.
Description The product is a high-performance enzyme blend that primarily consists of pectinases, along with additional activities such as cellulases, amylase, and proteases. These enzymes are produced through submerged fermentation of selected microbial strains, followed by purification and formulation.
This enzyme blend works synergistically to target pectin, proteins, starches, and celluloses in sugar cane juice. It effectively degrades these substances, preventing Maillard reactions, reducing juice viscosity, accelerating filtration, and lowering sugar content in molasses. As a result, the product enhances sugar quality while contributing to energy and cost savings.
Advantages Great improvement in filtration and shortened cooking time
Prevention of browning during processing
Increase of sugar yield by reducing molasse sugar content
Application For viscosity reduction, filtration and sugar yield increase during cane sugar processing
Application Area Fruit and vegetable processing
Wine enzymes
Plant extract
Application Recommendation The recommended dosage for sulfitation or carbonation process is 7-8 g/T of sugar cane. The dosage has to be optimized based on raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.
Before dosing the enzyme is dispersed in 10 times of water and added gently. The effects can be obvious in 5-10mins due to very high strength of the product.
