Overview

Description The neutral protease is produced by submerged fermentation of Bacillus subtilis followed by purification and formulation. The product has been widely used in alcohol fermentation to degrade proteins in raw materials.
Mechanism The neutral protease facilitates the hydrolysis of proteins to generate free amino acids and short peptides, operating effectively within a pH range from weakly acidic to weakly alkaline environments. In addition to its primary role as an endo-peptidase, this enzyme preparation also includes exo-peptidase activity. The combined action of both endo- and exo-peptidases results in the efficient release of short peptides and free amino acids.
Dosage The recommended dosage is 0.05-3 kg of the enzyme preparation per ton of total raw materials. The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.
