Overview

Summary The enzyme hydrolyzes the α-1,4-glycosidic bond in maltodextrin to produce maltodextrin and trehalose.
Description MTHase is produced by submerged fermentation followed by separation, ultrafiltration and formulation. The enzyme is a new type of α-amylase and belongs to the hydrolase family. It has hydrolytic activity and can hydrolyze the α-1,4-glycosidic bond in maltodextrin to produce maltodextrin and trehalose by reducing two glucose units near the trehalose moiety.
Advantages Hydrolyzes maltodextrin to produce trehalose
Application Hydrolyzes maltodextrin to produce trehalose
Application Area Food
Biosynthesis
Application Recommendation The recommended dosage is 0.1-1 kg/T of raw material. The dosage has to be optimized based on real situation, the raw material specifications, product expectations and processing parameters. It is better to begin the test with the smallest quantity.
