Description | MTHase is produced by submerged fermentation followed by separation, ultrafiltration and formulation. The enzyme is a new type of α-amylase and belongs to the hydrolase family. It has hydrolytic activity and can hydrolyze the α-1,4-glycosidic bond in maltodextrin to produce maltodextrin and trehalose by reducing two glucose units near the trehalose moiety. |
