Description Lipase is obtained through submerged fermentation of Aspergillus niger, followed by purification and formulation. This enzyme exhibits efficient hydrolytic activity across a broad temperature range (30°C-80°C) and within neutral to alkaline pH conditions. It catalyzes lipolysis, esterification, and transesterification reactions.
As a serine hydrolase, lipase facilitates the hydrolysis of triglycerides, ultimately producing glycerol and fatty acids. This process occurs at the oil-water interface. Additionally, lipase is capable of catalyzing ester synthesis and interesterification, making it versatile for various industrial applications.
