Overview

Summary Laccase catalyzes the oxidation of phenols and quite some other substances, and may be used to remove oxygen and phenolics, modify color or taste of food, help delignification, bleaching (textile), and so on.
Description Laccase is produced by submerged fermentation of Aspergillus oryzae, followed by purification and formulation. This enzyme catalyzes the oxidation of a broad range of substrates including phenols, aromatic amines, carboxylic acids, steroid hormones, metalloorganic compounds, and some non-phenolic compounds. The higher the redox potential of laccase, the broader its substrate specificity. Laccase is a polyphenol oxidase (ρ-dihydric phenol oxidase, EC 1.10.3.2) containing four copper ions, classified as a blue copper oxidase. It exists as a monomeric glycoprotein and is found in fungi, bacteria, and plants. Laccase primarily acts on phenolic compounds, facilitating one-electron oxidation and can catalyze the ring-cleavage reactions of aromatic compounds.
