Overview

Summary The microbial glucoamylase is used to turn starch into glucose in starch sugar processing, distilling, fermentation, brewing, juice clarification and other cases where saccharification is necessary.
Description Glucoamylase is generated through the submerged fermentation process of Aspergillus niger, and subsequently undergoes purification, formulation, and drying. The enzyme finds applications in starch sugar production, alcohol fermentation, distilling, brewing, and in the fermentation processes for organic acids and antibiotics.
Glucoamylase catalyzes the breakdown of α-1,4-glycosidic bonds in starch at the non-reducing end to generate glucose. Additionally, it can gradually hydrolyze α-1,6-glycosidic bonds. At the point where an α-1,6 bond forms a branch, the enzyme first cleaves the α-1,6 bonds followed by the α-1,4 bonds. Consequently, it can continuously release glucose units from amylose starting from the non-reducing end, ultimately producing glucose.

Application Recommendation Alcohol and ethanol industry: The recommended dosage is 0.6-1.2 kg per ton of total raw materials. Added at the beginning of saccharification after pH adjustment, then saccharifying at 60°C and pH 4.0-4.5 for 30-60 minutes.
Beer industry: The recommended dosage is 0.4-0.8 kg of the enzyme preparation per ton of total raw materials, added at mashing-in.
Starch sugar industry: The recommended dosage is 0.5-1.0 kg per ton of dry starch when saccharifying at 60-63°C and pH 4.3-4.5.
Other industries: Glucoamylase can also be used in the processing of rice wine, vinegar, antibiotics and citric acid industry, etc.
Reminding: The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.
