Description | A thermostable α-L-rhamnosidase enzyme catalyzes the cleavage of the bond between terminal L (+)-rhamnose and the aglycone portion of rhamnose-containing glycosides. It hydrolyzes terminal non-reducing α-L-rhamnose residues in α-L-rhamnosides, such as Naringin, Hesperidin, and Rutin. L-Rhamnose or its derivatives serve as suitable chiral structural components and are utilized in the synthesis of pharmaceutical products, plant protection agents, and the formulation of fragrances in the food and perfume industries. |
