Description | This product is derived from submerged fermentation of a selected microbial strain, known for its high activity of phospholipase. The enzyme selectively cleaves the diester bond in phosphatidylcholine (PC) to release phosphatidic acid and choline. Additionally, under specific conditions, it can catalyze transesterification, allowing the transformation of inexpensive crude phospholipids (predominantly PC) into rare, high-value products such as phosphatidylserine (PS). This process enhances the nutritional value and functionality of the phospholipids. |
