Description |
The product is derived from a strain of Aspergillus niger through submerged fermentation, followed by separation, purification, and formulation. Inulinase, also known as inulase (EC 3.2.1.7), is an enzyme with the systematic name beta-2,1-D-fructan fructanohydrolase. This enzyme catalyzes the hydrolysis of beta-2,1-D-fructosidic linkages in inulin, resulting in the production of fructooligosaccharides and fructose, both of which have extensive applications in the food, beverage, dairy, and pharmaceutical industries. Inulin is a natural linear polysaccharide consisting of a chain of D-fructose molecules with a furan configuration, linked and polymerized via β-2,1 glycosidic bonds, and a linear chain of glucose residue (G) attached to the terminal fructose residue (F). These chains typically have a degree of polymerization ranging from 2 to 60. The chemical structure of inulin can be represented as GFn, where n denotes the number of fructose units. |
