Overview

Summary This enzyme catalyzes the hydrolysis of beta-2,1-D-fructosidic linkages in inulin to produce fructooligosaccharides and fructose. It's widely used in many areas, such as food, beverage, dairy products and pharmaceutical industries.
Description The product is derived from a strain of Aspergillus niger through submerged fermentation, followed by separation, purification, and formulation. Inulinase, also known as inulase (EC 3.2.1.7), is an enzyme with the systematic name beta-2,1-D-fructan fructanohydrolase. This enzyme catalyzes the hydrolysis of beta-2,1-D-fructosidic linkages in inulin, resulting in the production of fructooligosaccharides and fructose, both of which have extensive applications in the food, beverage, dairy, and pharmaceutical industries.
Inulin is a natural linear polysaccharide consisting of a chain of D-fructose molecules with a furan configuration, linked and polymerized via β-2,1 glycosidic bonds, and a linear chain of glucose residue (G) attached to the terminal fructose residue (F). These chains typically have a degree of polymerization ranging from 2 to 60. The chemical structure of inulin can be represented as GFn, where n denotes the number of fructose units.
Advantages Inulinase for inulin hydrolysis into fructooligosaccharides and fructose
Application For inulin hydrolysis into fructooligosaccharides and fructose
Application Area Ethanol
Plant extract
Starch sugar
Portable alcohol
Application Recommendation The recommended dosage is 0.01-0.5 kg/T DS. The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.
