Description Low-Temperature α-Amylase [EC 3.2.1.1] is produced by submerged fermentation of Bacillus subtilis, followed by purification and formulation. This enzyme plays a crucial role in starch digestion, being the primary digestive enzyme for starch conversion in animals. LTAA is used to enhance starch digestion or as a dietary supplement for animals with insufficient endogenous amylase production.
