Overview

Description Each constituent of the product undergoes a meticulous process, starting with submerged fermentation utilizing carefully selected microbial strains, followed by purification and precise formulation. Drawing upon the specific mucilage composition of coffee cherries and insights gained from field trials, the product has been meticulously crafted to effectively eliminate the mucilage from depulped coffee cherries.
Mechanism Coffee mucilage is composed of pectic substances, cellulose, and neutral noncellulosic polysaccharides. This product contains a comprehensive set of enzymatic activities, including polygalacturonase, pectin lyase, and cellulase, to effectively degrade coffee mucilage. The enzymatic breakdown of mucilage components ensures rapid solubilization into the water phase, facilitating efficient demucilaging of coffee beans.
