| Description |
The β-glucanase preparation is produced by submerged fermentation of a carefully selected Trichoderma reesei strain, followed by purification and formulation. This preparation primarily contains β-glucanase, with additional beneficial activities from cellulase, xylanase, and pentosan-degrading enzymes. β-Glucan is a long chain composed of β-1,3- and β-1,4-linked glucose units, with 90% of β-glucans in barley having this structure. Although native β-glucanases are produced during malting, their activity is significantly reduced during kilning due to heat instability. The addition of external enzymes compensates for this loss, ensuring effective β-glucan degradation and satisfactory brewing results. |
