Produced from carefully chosen microbial strains through submerged fermentation, followed by purification and formulation, it is equipped with all the necessary activities to break down pectin in apple juice. This facilitates downstream processes like ultrafiltration and concentration and enhances juice stability. Pectin, along with araban and beta-glucan, often complicates processing and affects juice viscosity and stability. This enzyme product addresses these issues effectively, improving both processing and the final product’s stability. |
