Lysozyme, also referred to as Muramidase or N-acetylmuramide glycoanhydrase, is an enzyme that can hydrolyze mucopolysaccharides in pathogenic bacteria. This enzyme is naturally present in various sources such as egg whites of birds and poultry, as well as in the tears, saliva, blood, mucus, urine, milk, and tissue cells (including liver, kidney, lymphoid tissue, and intestines) of mammals. Additionally, lysozyme can be extracted from certain plants like papaya, turnip, barley, figs, cabbage, and radish. Possessing a broad antibacterial spectrum, lysozyme is effective against both Gram-positive and Gram-negative bacteria and can even target some viruses. It is safe, non-toxic, and has no adverse effects on the human body. As a result, lysozyme is widely utilized across various industries, including food, feed, and medicine. |
