Introduction |
Alkaline amylase is a brown liquid product produced through submerged fermentation of an Aspergillus strain. It effectively breaks down α-1,4-glycosidic linkages, depolymerizing starch into dextrins of varying chain lengths. This product is widely utilized in the detergent industry. The amylase degrades starch into water-soluble dextrins, oligosaccharides, and ultimately glucose, which helps solubilize and remove starch stains. |
