Overview

Description Nutrizyme (Acid Cellulase) [EC 3.2.1.4] is produced from a refined strain of Trichoderma reesei using liquid fermentation and extraction technology. This enzyme complex effectively hydrolyzes 1,4-beta-D-glycosidic linkages in botanical cellulose, lichenin, and cereal beta-D-glucans.
Endo-cellulase acts randomly on cellulose fibers, creating both reducing and non-reducing ends.
Exo-cellulase further degrades these fibers, releasing cellobiose, which consists of glucose dimers linked by β-1,4-glycosidic bonds.
Beta-glucosidase then hydrolyzes cellobiose into glucose.
Together, these activities enhance the breakdown of complex carbohydrates into simpler sugars.
